Gluten Free Fresh Raspberry Cake | Eggless Baking

Nothing says summer like fresh berries! This year began with strawberries which I turned in jam and syrup. Raspberries and blackberries followed and we just ate them fresh except for the occasional cake. The blueberries are still plentiful and sweet - and except for the one time I make a fresh blueberry sauce for pancakes, we are eating them fresh too. I plan to share the berry recipes from this year starting with this wonderfully light and airy Fresh Raspberry Cake with I baked using Gluten Free Flour. Needless to say, this wonderful cake is eggless too!

While there are all kinds of sweet breads that include seeds and nuts, its great to have a savory option that includes these nutritious and tasty ingredients too. Sunflower seeds are a powerhouse of nutrition. they are packed with minerals and vitamins and are a great addition to our diet. Strawberry Coffee Cake | Eggless Baking


Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Chocolate and Nuts Biscuit Cake | No Bake Dessert Recipe

Savory Cheddar Cheese Scones | Eggless Baking


Scones are like a quick bread and are perfect for baking in a pinch. Last weekend I made two breads - the cinnamon rolls and a vegetable bread. Both moved really fast and last night I knew I'd need another batch for the week. So instead of starting another batch of yeast bread I decided to make savory scones. Banana Cake

Banana Bread or Banana Cake is a favorite in our home. I bake it at least once a month - and have many variations of  this delicious cake on my blog. I have baked Banana Cake with raising, with nuts, multi-grain flours, with chocolate chips, butterscotch chips - the list goes on! This latest is a wonderful Breakfast Cake as it is made with oats. Its dense, healthy, and nutritious and packs the power you need in a breakfast food. I love baking this Cake on weekends, for road trips, or to take along on hikes. At home I just warm a glass of milk and enjoy the cake with it. For the road I pack individual slices in cling film and add them to our snack packs. They are perfect with a hot glass of tea after a good long walk.

Puran Poli | Flatbread with Cardamom Infused Sweet Lentil Filling


The first time I heard of Puran Poli was as a kid visiting a friend's home in Bombay! It was coming up to Holi and we had just popped in after an afternoon of skating. The home was replete with the aroma of ghee and cardamom and there was much bustle in the kitchen. On the dining table were large plates piled high with what looked liked parathas. But these parathas were sweetly fragrant, incredibly soft, and oozing with butter fat!!

Condensed Milk Cake | Easy Vanilla Cake | Eggless Baking

Vanilla Cake

Is there anything quite as yummy as condensed milk? Thickened milk loaded with sugar - just pour it over fruit, buttery hot toast, crackers and jam, anything you fancy for that loaded sweet satisfaction. Condensed milk goes back to my childhood. I remember my Mum would buy tins of it and open one as a treat after school. I loved to dip a teaspoon in the can, let the thick syrup coat the spoon entirely and then slowly lick it up, savoring every bite!! Then we would pour the leftovers into a covered glass dish and refrigerate it. The pleasure of eating chilled, yet more thickened condensed milk can only be experienced:)

I am back to Sunday baking and loving it!! So many delicious breads, cakes, and cookies to be baked. I love that I make these baked goodies at home, instead of buying them in the store. The number of ingredients in an average muffin have always scared me. But over time the difference in fresh home baked and store bought has become so apparent that the sweet and salt levels in these goodies have begun to bother me. I love to tinker with ingredients when I bake so that I get the healthy balanced treat. Here's to home baking and guilt free eating:)

Daring Bakers' December 2013: Chocolate Whoopie Pies


December was a cold cold month here, or so I thought!! January is turning out a lot colder than anyone expected. We are in the chiller, so to speak. But I have to say that the December Daring Bakers' Challenge of making Whoopie Pies cheered me up no end. I have walked our local farmers' market every summer and gazed at the bakery stands with their delicious wares. I have looked at wonder at kids, students, and sundry adults dive into enormous Whoopie Pies of all sizes, flavours, and colours. But I have so far never been able to work up the courage to actually purchase one and eat it.

Healthy Blueberry and Peach Cobbler | Eggless Baking


I have a weakness for peaches. And blueberries are a favourite in my family. So when I manage to get my hands on juicy peaches and fresh blueberries I just cannot resist whipping up some delicious Peach and Blueberry Cobbler! Now this may seem more like a recipe for the autumn, and yes I love baking fragrant crumbles, cobblers, and fruit cakes during the autumn. Its an ideal way to enjoy the last fruit of the summer while welcoming apples and pears into my kitchen.

Classic English Digestive Biscuits | Digestive Cookies


The one biscuit that I came to love from my time in England is the English Digestive. Ubiquitous yet unobtrusive, this most English of biscuits has found a place in the heart of many a visitor an local alike. The story of the English Digestive goes something like this: Known originally as a Wheaten, this sweet meal biscuit came to be called a 'digestive' as the use of sodium bicarbonate in the recipe led people to believe that the biscuit had antacid properties. Though records of its existence in England go back to the 1870s, it is believed that such brown meal biscuits were sold by English bakers from the 1850s!
