An easy way to add seeds and nuts to the diet is to bake it into bread. While there are all kinds of sweet breads that include seeds and nuts, its great to have a savory option that includes these nutritious and tasty ingredients too. Sunflower seeds are a powerhouse of nutrition. they are packed with minerals and vitamins and are a great addition to our diet. Strawberry Coffee Cake | Eggless Baking
Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Burger Buns | Burger Rolls | Eggless Baking
Baking at home is always a game changer. Once you learn how to handle yeast, the entire world of bread opens up - you are literally ready to bake breads of the world! Of course there is more to baking bread than understanding yeast. A lot has to do with the different kinds of grains, flours, liquids, nuts, seeds, seasonings, and oil that go into the bread. Dough preparation process, baking times and baking temperatures also play a significant role in getting to that delicious loaf of bread at home.
Whenever I bake bread and share my recipes, I receive many queries on the above topics. Queries on bread baking terminology, substitutes, troubleshooting also abound. I plan over time do primers on each of these topics and create a section here that will become a go to for these concerns. For today however I have recipe that is much overdue. With the arrival of summer and the long break ahead, weekdays and weekends tend to merge together! With the holiday mood it is imperative to try something new but also keep things easy and light. A favorite for these long days is the Pancake. There is so much you can do with this simple batter - add fresh fruit, dried fruit, nuts, jams, syrups, chocolate, and much much more. Today's recipe is simple, delicious and filling. It's also so easy to make that you can have your kids join you in the kitchen! Banana Walnut Cake Bars | Eggless Baking
The other day I was reading an article about how Banana Bread is having a moment!! Well, why not - there really is nothing like a bread, bake, or cake made with ripe, sweet bananas!! This is a recipe for Cake Bars and the traditional much loved combination for Banana Cake Bars tends to be chocolate chips. Since we are clean out of those and we are working with what is in the pantry, I decide to go with an ingredient that is much underestimated but truly delicious - walnuts. Walnuts really do very well in baked goods - they give bite, texture, and a flavor to them. If you have never tried baking with walnuts, this a recipe you might want to try!!

Laal Patta Gobhi ke Parathe | Red Cabbage Flatbread
Another recipe today that aims at working with what's in the refrigerator and pantry!! I noticed today there was a small head of red cabbage left over from the last batch of vegetable shopping. I had planned to make Parathas | Indian Flatbread with it over the weekend. However, as I also made a batch of Dosa Batter, we were working our way through crispy dosas for the last few days!!

Linguine with Carrots
So its interesting what you get to do with ingredients lying in your refrigerator and pantry in these times!! Here is a pasta recipe I conjured with Linguine, a couple of carrots, an onion, garlic, and pasta sauce. I added some of my favorite no salt seasoning from Costco and a slice of American cheese to the bowl and it was a meal!!
