I have been baking eggless for a really really long time!! I have been baking Gluten free for several years too!! However, I have not until now shared gluten free recipes regularly on my blog. Strawberry Coffee Cake | Eggless Baking


Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Banana Chocolate Chip Pancakes | Eggless Recipe

With the arrival of summer and the long break ahead, weekdays and weekends tend to merge together! With the holiday mood it is imperative to try something new but also keep things easy and light. A favorite for these long days is the Pancake. There is so much you can do with this simple batter - add fresh fruit, dried fruit, nuts, jams, syrups, chocolate, and much much more. Today's recipe is simple, delicious and filling. It's also so easy to make that you can have your kids join you in the kitchen! Once they can handle the hot pan and a spatula, they'll be making these pancakes for you every weekend!!

Classic English Tea Time Scones | Eggless Baking


With the winter finally setting in here, we are experiencing a real chill - the temperatures are dropping and there is a cold cold breeze about. My oven has been pressed back into service and I have been baking a lot. I baked some delicious cakes and cookies for sharing this holiday season. Cranberry and Chocolate Chip Cookies, Biscotti, Armenian Nutmeg Cakes, Cranberry Bread, Scones, Rustic Bread Loaf, Pizza Rolls, Pies have all been on the menu. Today I am sharing my recipe for Classic English Tea Time Scones.

Banana Oats Breakfast Cake | Eggless Baking

Banana Cake

Banana Bread or Banana Cake is a favorite in our home. I bake it at least once a month - and have many variations of  this delicious cake on my blog. I have baked Banana Cake with raising, with nuts, multi-grain flours, with chocolate chips, butterscotch chips - the list goes on! This latest is a wonderful Breakfast Cake as it is made with oats. Its dense, healthy, and nutritious and packs the power you need in a breakfast food. I love baking this Cake on weekends, for road trips, or to take along on hikes. At home I just warm a glass of milk and enjoy the cake with it. For the road I pack individual slices in cling film and add them to our snack packs. They are perfect with a hot glass of tea after a good long walk.

Crunchy Almond Butter Cookies

I am back to Sunday baking and loving it!! So many delicious breads, cakes, and cookies to be baked. I love that I make these baked goodies at home, instead of buying them in the store. The number of ingredients in an average muffin have always scared me. But over time the difference in fresh home baked and store bought has become so apparent that the sweet and salt levels in these goodies have begun to bother me. I love to tinker with ingredients when I bake so that I get the healthy balanced treat. Here's to home baking and guilt free eating:)

Indian Bakery Style Zeera Biscuits | Sweet and Salty Cumin Cookies


The Daring Bakers had a great challenge for November 2012 - 12 Days of Cookies!! Unfortunately as I am away from both home and desk at this time I am unable to have a steady access to the Internet and computer. As a result I find my self posting my DB Challenge late for the month. With limited possibilities I have posted my own recipe of a cookie that is loved and enjoyed by many Indians in their homes. Zeera Biscuits are a staple at local bakeries throughout the country and as I never get to see them in the States I was keen to try my hand at baking them. I did and the result was delicious!!

Yummylicious Banana Cardamom Cake with Cream Cheese Frosting


This is one of our favourite banana cakes. Seasoned with cardamom that complements bananas so beautifully, it is a perfect treat for the festive season! Of course, I love that the cake is eggless too. Usually when I make this cake in the afternoons for tea, I just dust it with some icing sugar! This time however to chase the rainy day blues away, I decided to indulge and frost it too:) The frosting recipe is very easy to do, just throw it all together and blend it and you are good to go.

Roasted Cumin and Poblano Whole Wheat Scones (Eggless)

When someone mentions scones, the first thing that comes to mind are Raisin Scones that go so perfectly with butter and jam and a cup of hot tea. I love them and make them every so often. More recently though I love baking savoury scones that also taste wonderful with butter, are perfect with a cup of soup, and taste great cold too.

Cinnamon Smile Buttermilk Pound Cake (Eggless)


When I started out with this project I intended to make a Cinnamon Swirl Cake! Pressed for time as I was I forgot to swirl the cinnamon streusel layer of the cake after pouring it into the pan. Oh well!! I thought: never mind, I am sure its it will make no difference to the cake. Even so, I was a bit upset knowing that the baked product would have no beautiful swirl to it.

Bite-Size Raspberry Jam Biscuits | Eggless Raspberry Jam Biscuits



Many years ago, I came across the jammie biscuit in England. Pretty yellow biscuits, with a sticky baked jam center really made my day. I loved them with my afternoon cuppa (shorthand for a cup of tea on the British Isles)!! They also reminded me of the jam biscuits we ate as kids back in India. The only difference was that in India, the filling was mixed fruit jam, a species of jam rarely found on super market shelves elsewhere, while in England, the filling was always raspberry jam, or apricot preserve!!

Banana Chocolate Chip Muffins

The sole muffin pan I own has been staring at me askance for several months now. For reasons I can't seem to identify, I have not baked muffins in a long time. My collection of decorative baking cups/ l on the other hand has been increasing steadily. Such pretty colours, designs, and patterns are now available in the market, I can hardly stop myself from adding them to my shopping basket! Just last month, my grocer had displayed some really attractive metallic baking cups and I just couldn't resist buying a box.
