With the arrival of summer and the long break ahead, weekdays and weekends tend to merge together! With the holiday mood it is imperative to try something new but also keep things easy and light. A favorite for these long days is the Pancake. There is so much you can do with this simple batter - add fresh fruit, dried fruit, nuts, jams, syrups, chocolate, and much much more. Today's recipe is simple, delicious and filling. It's also so easy to make that you can have your kids join you in the kitchen! Glazed Cinnamon Rolls | Eggless Baking


Hot, buttery, fluffy, and soft cinnamon rolls straight out of the oven are the ultimate breakfast treat! Add some sweet, gooey glaze on top of that and forget about ever buying cinnamon rolls at the neighborhood bakery!! These amazing rolls were our Sunday breakfast. As you can imagine they went down fast 🍴😋

Fresh Cherry and Chocolate Chip Scones | Eggless Baking


Cherries are everywhere - juicy, sweet, red! We had been gorging on them since the start of the season, but we really went all out a few weeks back, and decided to go cherry picking!! It was a great experience. We chose a cherry orchard that grew just one kind of cherry and was at the very end of the U-Pick radius. Arrived early morning to a cheery cherry sales crew, no crowds, and trees groaning under the weight of the cherries.

Chocolate and Nuts Biscuit Cake | No Bake Dessert Recipe


Now-a-days I am making a lot of no bake desserts. In this past week, I have been experimenting with multiple versions of Chocolate Biscuit Cake. At the beginning of the week I made a divine one with biscuits and cinnamon crackers, then shortly after that one with biscuits and candy, and today I made one with graham crackers and toasted almonds!!

Maraschino Cherry and Chocolate Chip Loaf


Last Saturday, I baked a fragrant Maraschino Cherry and Chocolate Chip loaf. It was meant for a get together with friends, some of whom I saw after a really very long time. It was a beautiful sunny day and we ate outdoors, picnic style. With the changing weather its just great to get out in the open. The warmth of the sun is reassuring and there are so many pretty wild flowers around.

Chocolate Chip Oatmeal Almond Breakfast Bars | Eggless Baking


Almonds are a nutrition powerhouse. I love cooking and baking with them and my latest passion is to bake with almond butter. Last month I baked the super delicious Cinnamon Almond Raisin Twists where I used almond butter as a spread in the twists. And last summer my Almond Butter Oats Cookies were such a treat that I keep getting repeat orders for them!!

Bananas Foster Cake | Eggless Baking


Bananas Foster makes for the most addictive dessert! Whenever I have some bananas sitting on the counter that are about to get over ripe, I am tempted to make Bananas Foster for dessert. So a couple of weeks back when just about 6 bananas were about to go over the edge, I decided to improvise. If you like Bananas Foster, what can be better than a batch of Bananas Foster jam? I made the jam by improvising on the Bananas Foster recipe.

Spicy Garlic Bread | Lasun Dabal Roti | Bread Recipes


Sour Cream Breads are wonderfully moist, dense, and inevitably delicious. The sour cream adds not only to the taste of bakery goods, it also gives them great moisture. As I am baking at a fairly regularly now, I try and rotate the kinds of breads I bake. On the weekend I baked the Cinnamon Almond Raisin Twists and a loaf of Hokkaido Milk Loaf. The milk bread disappeared so fast that I did not even get the opportunity to blog about it!!

Cinnamon Almond Raisin Twists


I love almond butter and baking with it is such fun. Apart from the fact that its really easy to bake with, and the taste that almond butter imparts to the baked product, its also a great and healthy alternative to butter. Last summer I baked Almond Butter Oats Cookies and they turned out delicious. Since then I have done a lot of baking and cooking using almond butter and been very happy with both the taste and quality of the product.

Shortbread is the ultimate biscuit. At least I happen to think so. I got addicted to them many years ago when I traveled to Scotland on work. Being a regular in Edinburgh, it was impossible to walk past any store, tea shop, or grocer without seeing an assortment of shortbread. I always made sure I carried back a stash on return home:)

Savory Cheddar Cheese Scones | Eggless Baking


Scones are like a quick bread and are perfect for baking in a pinch. Last weekend I made two breads - the cinnamon rolls and a vegetable bread. Both moved really fast and last night I knew I'd need another batch for the week. So instead of starting another batch of yeast bread I decided to make savory scones. Quick baking, a tasty bread that can be eaten warmed with butter, turned into a delicious sandwich, or even dunked in hot soup at dinner.

Fresh baked cinnamon rolls make for the best weekend breakfast. Chilly winter mornings make it so difficult to get out of bed. Just the thought of the chill is enough to make one want to curl up back in bed for that one last snuggle. But weekends are different, aren't they? Lazy mornings, hot coffee, and buttery cinnamon rolls fresh out of the oven make it all that easier.

Eggless Banana Chocolate Chip Cake

Three months ago in the throes of packing up to move, I baked a delicious cake. Yes, it was a banana cake, but this time I added a good cup of large chocolate chunks to it!! Banana and chocolate are undoubtedly made for each other and I generally like to pair dark chocolate with banana when I bake. Some of the recipes that are a favorite at my home are banana chocolate chip muffins, banana chocolate cookies and banana chocolate smoothie. The latter I always make with Ghirardelli chocolate sauce, mmmmm:)

Daring Bakers' December 2013: Chocolate Whoopie Pies


December was a cold cold month here, or so I thought!! January is turning out a lot colder than anyone expected. We are in the chiller, so to speak. But I have to say that the December Daring Bakers' Challenge of making Whoopie Pies cheered me up no end. I have walked our local farmers' market every summer and gazed at the bakery stands with their delicious wares. I have looked at wonder at kids, students, and sundry adults dive into enormous Whoopie Pies of all sizes, flavours, and colours. But I have so far never been able to work up the courage to actually purchase one and eat it.

Frosted Chocolate Surprise Cookies | Cookies for Christmas


We had lots and lots of fluffy white snow over the last week, and were pretty much snowed in over Christmas. The white stuff covered the entire landscape and covered the branches of the bare trees too. The falling temperatures and the ice rain that followed froze pretty much everything in sight including the snow covered branches, and we felt we were in one of those picture postcards of a winter wonderland!! Sleigh bells ringing, reindeer, hot chocolate, and all!! Ahh Christmas!!

Cinnamon Walnut Cookie Logs | Cookies for Christmas | Eggless Baking


Its getting pretty chilly out here. There is snow on the ground and on some days the wind chills are below the freezing mark. With the Thanksgiving behind us, everyone seems to be in a great hurry to get Christmas preparations under way. Lights, trees, festive decorations, and candy are all out in plenty. Santa has set up his workshop in the malls and the smiles on the children's faces are a sight to behold!!

Thattai | Crispy Rice Flour Crackers


The first time I tasted Thattai was at a South Indian grocery store in my city! Crispy, crunchy, and a tongue tickling blend of spices just made it my instant favourite. Every time I head out for groceries I had to buy myself a batch. Back home I'd make a cup of hot tea and we would crunch them until they finished. One day I asked the owner of the store what exactly they were made of and she very kindly gave me the recipe. Since then, I have always made Thattai at home. Not because I did not like the one from the store, but because once you munch one Thattai you cannot stop. I decide that if I really was craving them then I could make them. If not, no unnecessary munching of snacks just because of a visit to the store!!
