Gluten Free Fresh Raspberry Cake | Eggless Baking

Nothing says summer like fresh berries! This year began with strawberries which I turned in jam and syrup. Raspberries and blackberries followed and we just ate them fresh except for the occasional cake. The blueberries are still plentiful and sweet - and except for the one time I make a fresh blueberry sauce for pancakes, we are eating them fresh too. I plan to share the berry recipes from this year starting with this wonderfully light and airy Fresh Raspberry Cake with I baked using Gluten Free Flour. Needless to say, this wonderful cake is eggless too!

Strawberry Coffee Cake | Eggless Baking


Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Glazed Cinnamon Rolls | Eggless Baking


Hot, buttery, fluffy, and soft cinnamon rolls straight out of the oven are the ultimate breakfast treat! Add some sweet, gooey glaze on top of that and forget about ever buying cinnamon rolls at the neighborhood bakery!! These amazing rolls were our Sunday breakfast. As you can imagine they went down fast 🍴😋

Fresh Cherry and Chocolate Chip Scones | Eggless Baking


Cherries are everywhere - juicy, sweet, red! We had been gorging on them since the start of the season, but we really went all out a few weeks back, and decided to go cherry picking!! It was a great experience. We chose a cherry orchard that grew just one kind of cherry and was at the very end of the U-Pick radius. Arrived early morning to a cheery cherry sales crew, no crowds, and trees groaning under the weight of the cherries.

Shortbread is the ultimate biscuit. At least I happen to think so. I got addicted to them many years ago when I traveled to Scotland on work. Being a regular in Edinburgh, it was impossible to walk past any store, tea shop, or grocer without seeing an assortment of shortbread. I always made sure I carried back a stash on return home:)

Condensed Milk Cake | Easy Vanilla Cake | Eggless Baking

Vanilla Cake

Is there anything quite as yummy as condensed milk? Thickened milk loaded with sugar - just pour it over fruit, buttery hot toast, crackers and jam, anything you fancy for that loaded sweet satisfaction. Condensed milk goes back to my childhood. I remember my Mum would buy tins of it and open one as a treat after school. I loved to dip a teaspoon in the can, let the thick syrup coat the spoon entirely and then slowly lick it up, savoring every bite!! Then we would pour the leftovers into a covered glass dish and refrigerate it. The pleasure of eating chilled, yet more thickened condensed milk can only be experienced:)

I am back to Sunday baking and loving it!! So many delicious breads, cakes, and cookies to be baked. I love that I make these baked goodies at home, instead of buying them in the store. The number of ingredients in an average muffin have always scared me. But over time the difference in fresh home baked and store bought has become so apparent that the sweet and salt levels in these goodies have begun to bother me. I love to tinker with ingredients when I bake so that I get the healthy balanced treat. Here's to home baking and guilt free eating:)

Daring Bakers' December 2013: Chocolate Whoopie Pies


December was a cold cold month here, or so I thought!! January is turning out a lot colder than anyone expected. We are in the chiller, so to speak. But I have to say that the December Daring Bakers' Challenge of making Whoopie Pies cheered me up no end. I have walked our local farmers' market every summer and gazed at the bakery stands with their delicious wares. I have looked at wonder at kids, students, and sundry adults dive into enormous Whoopie Pies of all sizes, flavours, and colours. But I have so far never been able to work up the courage to actually purchase one and eat it.

Cinnamon Walnut Cookie Logs | Cookies for Christmas | Eggless Baking


Its getting pretty chilly out here. There is snow on the ground and on some days the wind chills are below the freezing mark. With the Thanksgiving behind us, everyone seems to be in a great hurry to get Christmas preparations under way. Lights, trees, festive decorations, and candy are all out in plenty. Santa has set up his workshop in the malls and the smiles on the children's faces are a sight to behold!!

Chocolate Chunks Cookies | Eggless Cookies


I like to bake cookies. Apart from the taste, I love knowing exactly what they are made of - no artificial ingredients, no colors, nor preservatives, no hydrogenated fats!! This is not to say that I am not occasionally partial to the biscuits I grew up eating in India. Its more that I am now more comfortable with the home baked versions. You can put them together so quickly and most of them can be stored for up to ten days, provided you can keep your hands off them.

Yummylicious Banana Cardamom Cake with Cream Cheese Frosting


This is one of our favourite banana cakes. Seasoned with cardamom that complements bananas so beautifully, it is a perfect treat for the festive season! Of course, I love that the cake is eggless too. Usually when I make this cake in the afternoons for tea, I just dust it with some icing sugar! This time however to chase the rainy day blues away, I decided to indulge and frost it too:) The frosting recipe is very easy to do, just throw it all together and blend it and you are good to go.

Banana Cake with Chia Seeds and Oats (Eggless)


I have been baking cakes a long time now. Earlier I baked with eggs, then only with egg whites, but now I prefer eggless cakes and bakes. I just find the texture, flavour, and smell of the baked product improve if you skip the eggs altogether. The cakes are also less heavy and more easily digestible. What I love even more about this cake is that it is virtually grease free too! Yes - just one tablespoon of butter.


This is also one of the easiest cakes I have created. You can pretty much just throw all the ingredients in a bowl, one good whisk, and its good to in the oven. The final product is delicious and healthy. I loved the moist spongy texture that I got and the chia seeds added just the right amount of delicate crunch to this bake.

Ingredients:
1 cup All Purpose flour
1/2 cup oats flour
2 tbsp chia seeds
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup apple sauce
1/2 cup buttermilk
1 tbsp butter
1 large very ripe banana, mashed
1 tsp vanilla extract

Method:
  1. Sift together all the dry ingredients in a large mixing bowl.
  2. Add the apple sauce, buttermilk, vanilla extract, butter, and the mashed banana.
  3. Using a wooden spoon, mix well.
  4. Pour the mix into a prepared baking pan.
  5. Bake at 350 F for 35-45 minutes or until a toothpick inserted in the centre comes out clean.
  6. Cool the cake in the tin for 15 minutes and then on a wire rack.
Enjoy with a glass of cold milk!

Cinnamon Smile Buttermilk Pound Cake (Eggless)


When I started out with this project I intended to make a Cinnamon Swirl Cake! Pressed for time as I was I forgot to swirl the cinnamon streusel layer of the cake after pouring it into the pan. Oh well!! I thought: never mind, I am sure its it will make no difference to the cake. Even so, I was a bit upset knowing that the baked product would have no beautiful swirl to it.

Banana Chocolate Chip Muffins

The sole muffin pan I own has been staring at me askance for several months now. For reasons I can't seem to identify, I have not baked muffins in a long time. My collection of decorative baking cups/ l on the other hand has been increasing steadily. Such pretty colours, designs, and patterns are now available in the market, I can hardly stop myself from adding them to my shopping basket! Just last month, my grocer had displayed some really attractive metallic baking cups and I just couldn't resist buying a box.

Banana Walnut Cake (Eggless)

Back to some baking!! The banana-walnut combination is what I always describe as sterling for cakes. The sweetness of the banana is set off perfectly by the oily nuttiness of the walnut. Needless to say, Banana-Walnut Cake ranks as one of the favourites in our home. I developed this recipe for an eggless cake many years ago when I wanted to stop adding eggs to my bakes. Though I still bake with egg whites, I like to avoid them wherever I can. This cake comes out so soft, spongy, and moist, you will never know that it was made without eggs!!

Christmas Cookies: Cinnamon-Chocolate Swirls


Now home-baked cookies and I have a history of sorts. I developed an avid interest in baked goodies early on, and as time went by it turned into a passion of sorts. Yes, there's always a time for a story and this is one for Christmas cookies. As I stumbled across Susan's Christmas Cookies from Around the World 2007, I was inspired to dig out my old faithful - a treasured recipe book which holds a collection of my very favourite tried and trusted cookie recipes. Just a turn of the page and memories of baking batches of cookies for school events, for family, friends all came flooding back. Just as much as I loved the aroma of my Mum's kitchen every time I loaded in a fresh batch to bake, the fact remains that I really have not had the time or the opportunity to indulge in this joy for several years. Now thanks to Susan I have come back to delight in baking cookies. Of course half the joy of baking cookies at home (read from scratch) lies in the sharing. With every fresh batch I have been counting off friends and family to whom I am shipping off these delectable delights. May be that is the true spirit of a Christmas cookie - its sharing!!
