Maple Corn Muffins with Maple Butter | Eggless Baking


Winter baking is my favorite! Fragrant bakes, cozy home, and big appetites. Last week I made Orange and Cranberry Loafs with dried cranberries and fresh orange pieces! They were for sharing - I made 10 loafs and my home was redolent with the smell of citrus!! The recipe is coming up soon on the blog. Fresh Strawberry Scones | Eggless Baking


Its summer and strawberry season is in full swing. Farmer's markets, super markets, coops are all well stocked with the luscious red berries. Though we have been enjoying the berries since April, last week we decided that it was time to go strawberry picking. It was our first time in hereabouts, we had great weather in the valley, and we loved it. The strawberries were small but sweet and full of flavor, We ate way too may and picked over 10 lbs to bring home!!

Bananas Foster Cake | Eggless Baking


Bananas Foster makes for the most addictive dessert! Whenever I have some bananas sitting on the counter that are about to get over ripe, I am tempted to make Bananas Foster for dessert. So a couple of weeks back when just about 6 bananas were about to go over the edge, I decided to improvise. If you like Bananas Foster, what can be better than a batch of Bananas Foster jam? I made the jam by improvising on the Bananas Foster recipe.

Spicy Garlic Bread | Lasun Dabal Roti | Bread Recipes


Sour Cream Breads are wonderfully moist, dense, and inevitably delicious. The sour cream adds not only to the taste of bakery goods, it also gives them great moisture. As I am baking at a fairly regularly now, I try and rotate the kinds of breads I bake. On the weekend I baked the Cinnamon Almond Raisin Twists and a loaf of Hokkaido Milk Loaf. The milk bread disappeared so fast that I did not even get the opportunity to blog about it!!

Scones are like a quick bread and are perfect for baking in a pinch. Last weekend I made two breads - the cinnamon rolls and a vegetable bread. Both moved really fast and last night I knew I'd need another batch for the week. So instead of starting another batch of yeast bread I decided to make savory scones. Quick baking, a tasty bread that can be eaten warmed with butter, turned into a delicious sandwich, or even dunked in hot soup at dinner.

Sour Cream Bread with Onions and Peppers


Here is another of my favourite go-to bread recipes. Whenever I make soup or stew this is the bread I bake to accompany it. Not only does it have a great texture, it slices and toasts really well too. Making bread sometimes seems like a really tricky job. But I can assure you that it is not. In fact whats really difficult is staying away from it once it ready to eat!! Try this beautiful loaf. After the compliments you receive, you won't regret it!!

Banana Chocolate Chip Muffins

The sole muffin pan I own has been staring at me askance for several months now. For reasons I can't seem to identify, I have not baked muffins in a long time. My collection of decorative baking cups/ l on the other hand has been increasing steadily. Such pretty colours, designs, and patterns are now available in the market, I can hardly stop myself from adding them to my shopping basket! Just last month, my grocer had displayed some really attractive metallic baking cups and I just couldn't resist buying a box.

Daring Cooks June 2011: Potato Salad

With the 4th of July weekend coming up, no recipe could be better suited for a Daring Cooks Challenge than one of Potato Salad. Iconic at barbecue tables across the country the salad itself has become a great summer eat! Of course there are innumerable types of potato salads - creamy, spicy, hearty, light. The sheer versatility of the potato allows for much variation in flavour and accommodation of regional taste.
I chose to make a classic-ish style of salad - creamy, cheesy, with a burst of flavour that comes from a combination of cilantro, lemon juice, and sour cream!!

Ingredients:
4 potatoes, boiled and cubed
1/4 cup cilantro, chopped
1/2 ts crushed black pepper
1/4 tsp mustard powder
Salt to taste
1/2 tsp honey
1/4 lemon, squeezed
1 tbsp olive oil, extra virgin
1/4 cup sour cream
1/4 cup cheese, grated

Method:
  1. In a small mixing bowl, blend together the sour cream, honey, olive oil, and lemon juice.
  2. To this mix, add salt, pepper, and mustard powder. 
  3. In a larger mixing bowl, toss together the cubed potatoes, cheese, and the cilantro.
  4. Pour the dressing over it and using a couple of forks, mix well enough to coat the potatoes well.
  5. Turn into a serving bowl. Chill in the refrigerator before serving.

Winter Root Vegetable Soup

This is one of my favourite soups. I make some variation of it every winter when root vegetables are abundant and easily available!! The combination of parsnips, carrots, and turnips with celery turn out an astonishingly hearty and tasty soup. If you have home made vegetable stock, use that. If not, try an organic, low/no sodium variety for the most natural taste!!

Watercress & Potato Soup

Now there's nothing quite like warm soup on a cold winter's day. And here in the Great Lakes area we appear to be having the coldest, snowiest winter ever. In fact, not only do we have 3 feet snow on the ground, the branches of trees have frozen over and are glittering like shiny ornaments in the bright winter sun! Yes I spent the better half of my day admiring this sight and taking loads of photographs. With the setting sun, I decided to get back in and get some hot soup going.

We love soup so much around here that I have taught myself to prepare it 'from scratch'!! Yes, I make my own soup stock, freeze it, and keep it handy to boil up a steaming hot favourite in a snap. Here's my recipe for our favourite Watercress & Potato Soup.
