Gluten Free Fresh Raspberry Cake | Eggless Baking

Nothing says summer like fresh berries! This year began with strawberries which I turned in jam and syrup. Raspberries and blackberries followed and we just ate them fresh except for the occasional cake. The blueberries are still plentiful and sweet - and except for the one time I make a fresh blueberry sauce for pancakes, we are eating them fresh too. I plan to share the berry recipes from this year starting with this wonderfully light and airy Fresh Raspberry Cake with I baked using Gluten Free Flour. Needless to say, this wonderful cake is eggless too!

Nankhatai with Gur Shakkar | Indian Bakery Biscuits



Today I am sharing another recipe for Nankhatai! This one is really melts in the mouth and has a distinctive flavor as I have use Gur Shakkar to sweeten it. Sunflower Seed Bread | Eggless Baking


An easy way to add seeds and nuts to the diet is to bake it into bread. While there are all kinds of sweet breads that include seeds and nuts, its great to have a savory option that includes these nutritious and tasty ingredients too. Sunflower seeds are a powerhouse of nutrition. they are packed with minerals and vitamins and are a great addition to our diet. Here I add these seeds into one of my favorite bread recipes to add flavor and provide a satisfying crunch too.

Strawberry Coffee Cake | Eggless Baking


Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Burger Buns | Burger Rolls | Eggless Baking

Baking at home is always a game changer. Once you learn how to handle yeast, the entire world of bread opens up - you are literally ready to bake breads of the world! Of course there is more to baking bread than understanding yeast. A lot has to do with the different kinds of grains, flours, liquids, nuts, seeds, seasonings, and oil that go into the bread. Dough preparation process, baking times and baking temperatures also play a significant role in getting to that delicious loaf of bread at home.

Whenever I bake bread and share my recipes, I receive many queries on the above topics. Queries on bread baking terminology, substitutes, troubleshooting also abound. I plan over time do primers on each of these topics and create a section here that will become a go to for these concerns. For today however I have recipe that is much overdue. I have baked these Burger Rolls several times in the past few months and each time I have been delighted with the result. I hope you will try this recipe and share with friends too.

Banana Walnut Cake Bars | Eggless Baking


The other day I was reading an article about how Banana Bread is having a moment!! Well, why not - there really is nothing like a bread, bake, or cake made with ripe, sweet bananas!! This is a recipe for Cake Bars and the traditional much loved combination for Banana Cake Bars tends to be chocolate chips. Since we are clean out of those and we are working with what is in the pantry, I decide to go with an ingredient that is much underestimated but truly delicious - walnuts. Walnuts really do very well in baked goods - they give bite, texture, and a flavor to them. If you have never tried baking with walnuts, this a recipe you might want to try!!

Lemon Coffee Cake | Eggless Baking


Lemons are aplenty and after a week of Lemonade Recipes 😉, I was ready to expand my recipe horizons 😄!! So yesterday I baked my favorite Lemon Cake - eggless of course!! I often bake citrus cakes, but this was the first time I bake one topped with Streusel!! It was surprisingly good, with a dense crumb, and a light lemony flavor which came from the table spoonful of lemon zest and the fresh lemon juice in the recipe.

Dundee Cake | Eggless Baking


A traditional Dundee Cake comes from the Scottish kitchens and is packed with a variety of dried fruit and wears a crown of almonds. It is a dense, delicious cake, with a very rich crumb, best enjoyed with a cup of fragrant tea. Many years ago when I taught myself to bake, Dundee Cake was my go to for special treats and the very cold winters of Delhi.

Glazed Cinnamon Rolls | Eggless Baking


Hot, buttery, fluffy, and soft cinnamon rolls straight out of the oven are the ultimate breakfast treat! Add some sweet, gooey glaze on top of that and forget about ever buying cinnamon rolls at the neighborhood bakery!! These amazing rolls were our Sunday breakfast. As you can imagine they went down fast 🍴😋

Fresh Cherry and Chocolate Chip Scones | Eggless Baking


Cherries are everywhere - juicy, sweet, red! We had been gorging on them since the start of the season, but we really went all out a few weeks back, and decided to go cherry picking!! It was a great experience. We chose a cherry orchard that grew just one kind of cherry and was at the very end of the U-Pick radius. Arrived early morning to a cheery cherry sales crew, no crowds, and trees groaning under the weight of the cherries.

Fresh Strawberry Scones | Eggless Baking


Its summer and strawberry season is in full swing. Farmer's markets, super markets, coops are all well stocked with the luscious red berries. Though we have been enjoying the berries since April, last week we decided that it was time to go strawberry picking. It was our first time in hereabouts, we had great weather in the valley, and we loved it. The strawberries were small but sweet and full of flavor, We ate way too may and picked over 10 lbs to bring home!!

Blueberry Crumble Coffeecake | Eggless Baking


While it has been years since I baked anything with a streusel topping, I have to say bakes with a crumble have always been a favorite with me. Streusel toppings always remind me of the cold Midwest winters, snowy evenings, and the warm smell of cinnamon wafting through our home! So its quite contrary that I am baking a Blueberry Crumble Coffeecake right at the start of a hot summer.

Herb & Spice Olive Oil Bread | Eggless Baking


This bread was baked around the time I did my Nutella Swirl Bread. Ever since its been too hot around here to even approach the oven!! I am glad I saved this recipe in my blog drafts, as I have been receiving so many requests from friends for more bread recipes:) Its a very simple loaf to bake, and is so very flavorful too. Just toss in your favorite herbs and spices and you are good to go.

Sweet Red Onion and Cilantro Quick Bread | Eggless Baking


When I first started baking bread regularly, one of my go to recipe would be Quick Bread or Cheats Bread as I like to call it. No yeast, no kneading, no shaping by hand, and most importantly no waiting!! From start to finish an average quick bread can be ready in just over an hour. Warm, soft, super delicious with globs of butter, a good quick bread can make your day. I usually make these breads for breakfast, but you can bake them at night, cool  them, wrap them in foil and save them in the refrigerator for the next day. Planning a family get together? Quick breads are perfect - bake and freeze for up to a month and you are good to go.

Chocolate Chip Oatmeal Almond Breakfast Bars | Eggless Baking


Almonds are a nutrition powerhouse. I love cooking and baking with them and my latest passion is to bake with almond butter. Last month I baked the super delicious Cinnamon Almond Raisin Twists where I used almond butter as a spread in the twists. And last summer my Almond Butter Oats Cookies were such a treat that I keep getting repeat orders for them!!

Dates and Walnut Cake | Eggless Baking


Date and Walnut was and continues to be one of my favorite cakes. I remember baking it as a kid in high school. We always ate it with hot custard or vanilla ice cream. This recipe is heavily tweaked from my original as it had no eggs and is made with a mix of all-purpose and whole wheat flour. The eggless version comes out really well - great crumb, it slices well, and is incredibly moist and delicious.
