Patta Gobhi ki Bhaji | Sauteed Cabbage | Farm Fresh Produce


Cabbage is a wonderful vegetable. Apart from belonging to the family of cruciferous vegetables, it is packed with beta-carotene, Vitamin C, and fiber! My last visit to the farm yielded some beautiful heads of cabbage, kohl rabi, beets, and cucumbers. I was also able to get some glossy banana peppers and some fragrant lemon grass.But more about those later. Today I want to share a cabbage recipe I developed for the farm fresh cabbage I got last weekend.

Zucchini and Potato Fritters | Farm Fresh Produce


Its that time of the year again when our favorite farm is open to 'Pick Your Own' seasonal vegetables. Saturday was the first time this year we drove down to pick delicious sun kissed vegetables including summer squash, zucchini, kohl rabi, kale, green onions, and beets! Quite a haul you might say - but we have been waiting for over a month for the farm to open up. Extended winter and an unusually cold spring delayed the vegetables this year and I can't believe that it is July when the produce actually began to show up in quantities that has allowed the farm to open! But we are not complaining - we are ready and willing to pick:)

Green Chutney | Cilantro Chutney Sandwich Spread


I have received many queries in my mailbox about the bright green chutney photographed with the Theplas in the previous post. So here is the recipe. We usually carry Theplas on road trips or picnics. As a rule I prefer not to carry any condiment with them as it tends to get all messy in the car. However this time I decided to make my favourite thick chutney to go with them. We enjoyed the theplas and chutney at a beautiful wayside rest stop with strong sugary tea that I had carried from home in a flask!

Green Beans and Corn with Toasted Sesame Seeds


Green Beans and Corn always makes for a flavourful combination, be it in a bake or a typically Indian style vegetable (sabzi). I make this combination a lot in late summer when fresh green beans and corn are both aplenty in the farmers' markets. At this time the beans are so tender, you barely need to cook them, just a gently fry is good enough. And the corn is wonderfully sweet and available literally at every street corner along with tomatoes and huge juicy watermelons!!

Brussels Sprouts ki Bhaji | Brussels Sprouts Stir Fry


I like a light weekday lunch, usually a roti, a cup of dal, and vegetable. Brussels Sprouts just fit the bill for a simple vegetable on the lunch menu. Though Brussels Sprouts are the bane of many a cook's existence, and often saved for a Christmas meal, at which time they are supposed to be a delicacy, I rather like their bitter nutty taste. This was one vegetable that I loved cooking throughout the year back in London. It really quick, very nutritious, and wonderful with chappatis!

Then there are the many textures, the flavours, the combinations, the dry chutneys which can stay pretty much forever if refrigerated properly and the wet versions that disappear before the meal is over!! Lasun Aloo | Garlicky Potatoes

Its getting warmer here by the day and we have had temperatures hit the upper 80s in the last week. The sun is incredibly bright and everything outside looks beautiful as it basks in its warmth!! Its been a long time coming in our part of the world but summer has finally arrived. Our Farmer's Market is in full swing, with an amazing array of blooms, fruits, and produce. Just walking around the market is pure pleasure.

Dal aur Til Tarka Wali Patta Gobhi | Lentil and Sesame Tempered Cabbage


Things have been so hectic in the last few months we have not had time to catch a breath. With packed schedules, it is easy to be tempted with take-out or making do with some snacking. Both being seriously unhealthy as meal substitutes, I try to do some quick cooking everyday. Usually a vegetable and a lentils is a must with chappati and or rice. We love yogurt/curd and I always keep some handy in the refrigerator. Off late I have begun making the simplest of recipes, which are packed with flavour, but not time consuming in the effort to keep meals healthy.

Gajar, Matar, Bhutte ki Bhaji | Mixed Vegetables Sabzi

I love the taste of peas and carrots together, or beans and corn together in a sabzi. In a Delhi winter, it is quite common to combine sweet green peas, beautiful red carrots, with tender beans to make a flavourful sabzi. We don't get the lovely red carrots in this part of the world, but to the remaining vegetables I add a handful of corn. A mixed vegetable sabzi can be made pretty much with any masala, but my favourite is with Goda Masala!!

Aloo Phoolgobhi Sabzi | Aloo Gobhi | Potato Cauliflower Fry


The simplest of vegetables prepared at mealtimes in the winter in north India is aloo gobhi. While regional variations abound, this simple recipe is a staple in homes in Uttar Pradesh. It can be served with any flatbread - chappatis, parathas, and even pooris. I love it with chana dal and plain home made yogurt.

Fresh Fruit Yogurt: Delicious Strawberry & Blueberry Tiers

I love fruited yogurts, but always feel rather uncomfortable buying them in the supermarket. All kinds of added preservatives, too much sugar, artificial flavouring are the ultimate turnoff. There are some great organic brands available, but I feel that are truly overpriced for the quantity offered. All in all I prefer to make my own from scratch, but occasionally I do like to use plain Greek yogurt to make fruit yogurts or deliciously fruity parfaits!!

Tamatar Moongphali Pachidi | Tomato Peanut Chutney: Version 1.0

Few days back I made rava idli at home. It was a real treat. My desi mixer-grinder stopped working a few months back and I have not been able to make any of our favourites including idli, dosa, uttapa, chutney since. Having sworn off buying another blender until I find something that is truly heavy duty and will fulfill the needs of a desi kitchen, I am stuck with pursuing recipes that require at the most a dry grinder!! Finding one to do replace the conked machine is no easy task. Any one with any suggestion, do leave a note in the comments section - I will truly appreciate any input in this matter :)

But with winter still around - half a foot of snow and freezing temperatures -it seems about right to go ahead and treat ourselves and our friends with some great goodies. I have been making something special every week (though rarely having the time to blog about it!!) - and this week it was the turn of chocolate bark.

Malaidar Palak Paneer | Creamy Spinach with Indian Style Cottage Cheese

Its snowing here again and we got around half a foot of the fluffy stuff today!! The trees look really pretty but he roads are another story altogether!! Back home in the early afternoon, I decided to get some cooking done and stock the refrigerator for the next few days - look like the chill is going to set in and by Friday the temperatures will be in the minus F numbers!!

I began with making some fresh paneer (Indian Style Cottage Cheese), then chopped some apples for a crumble, soaked some soya nuggets for a curry, and finally set the pressure cooking off with chilka mung (split green mung beans) with Swiss Chard.

Tamatar -Shimla-Paneer Bhurji | Tomato-Green Pepper-Cottage Cheese Scramble


Paneer or Indian Style Cottage Cheese is a real favourite of mine. When I first moved to this city, there was only one Indian store and I never quite trusted the fresh/frozen paneer there. I took to making paneer at home and have stuck to it ever since. Last evening I was craving just some of these creamy home made cheese curds, and I made a quick batch. I let them stay a little soft as I wanted to make this delicious creamy Paneer Bhurji - scrambled with vegetables and spices.
