Gluten Free Fresh Raspberry Cake | Eggless Baking

Nothing says summer like fresh berries! This year began with strawberries which I turned in jam and syrup. Raspberries and blackberries followed and we just ate them fresh except for the occasional cake. The blueberries are still plentiful and sweet - and except for the one time I make a fresh blueberry sauce for pancakes, we are eating them fresh too. I plan to share the berry recipes from this year starting with this wonderfully light and airy Fresh Raspberry Cake with I baked using Gluten Free Flour. Needless to say, this wonderful cake is eggless too!

Lemon Coffee Cake | Eggless Baking


Lemons are aplenty and after a week of Lemonade Recipes 😉, I was ready to expand my recipe horizons 😄!! So yesterday I baked my favorite Lemon Cake - eggless of course!! I often bake citrus cakes, but this was the first time I bake one topped with Streusel!! It was surprisingly good, with a dense crumb, and a light lemony flavor which came from the table spoonful of lemon zest and the fresh lemon juice in the recipe.

Dundee Cake | Eggless Baking


A traditional Dundee Cake comes from the Scottish kitchens and is packed with a variety of dried fruit and wears a crown of almonds. It is a dense, delicious cake, with a very rich crumb, best enjoyed with a cup of fragrant tea. Many years ago when I taught myself to bake, Dundee Cake was my go to for special treats and the very cold winters of Delhi.

Blueberry Crumble Coffeecake | Eggless Baking


While it has been years since I baked anything with a streusel topping, I have to say bakes with a crumble have always been a favorite with me. Streusel toppings always remind me of the cold Midwest winters, snowy evenings, and the warm smell of cinnamon wafting through our home! So its quite contrary that I am baking a Blueberry Crumble Coffeecake right at the start of a hot summer.

Maraschino Cherry and Chocolate Chip Loaf


Last Saturday, I baked a fragrant Maraschino Cherry and Chocolate Chip loaf. It was meant for a get together with friends, some of whom I saw after a really very long time. It was a beautiful sunny day and we ate outdoors, picnic style. With the changing weather its just great to get out in the open. The warmth of the sun is reassuring and there are so many pretty wild flowers around.

Dates and Walnut Cake | Eggless Baking


Date and Walnut was and continues to be one of my favorite cakes. I remember baking it as a kid in high school. We always ate it with hot custard or vanilla ice cream. This recipe is heavily tweaked from my original as it had no eggs and is made with a mix of all-purpose and whole wheat flour. The eggless version comes out really well - great crumb, it slices well, and is incredibly moist and delicious.

Condensed Milk Cake | Easy Vanilla Cake | Eggless Baking

Vanilla Cake

Is there anything quite as yummy as condensed milk? Thickened milk loaded with sugar - just pour it over fruit, buttery hot toast, crackers and jam, anything you fancy for that loaded sweet satisfaction. Condensed milk goes back to my childhood. I remember my Mum would buy tins of it and open one as a treat after school. I loved to dip a teaspoon in the can, let the thick syrup coat the spoon entirely and then slowly lick it up, savoring every bite!! Then we would pour the leftovers into a covered glass dish and refrigerate it. The pleasure of eating chilled, yet more thickened condensed milk can only be experienced:)

The Best Banana Chocolate Chunk Cake | Eggless Baking

Eggless Banana Chocolate Chip Cake

Three months ago in the throes of packing up to move, I baked a delicious cake. Yes, it was a banana cake, but this time I added a good cup of large chocolate chunks to it!! Banana and chocolate are undoubtedly made for each other and I generally like to pair dark chocolate with banana when I bake. Some of the recipes that are a favorite at my home are banana chocolate chip muffins, banana chocolate cookies and banana chocolate smoothie. The latter I always make with Ghirardelli chocolate sauce, mmmmm:)

Banana, Butterscotch, Cardamom Blondies | Eggless Baking



Last weekend I made a super delicious cake. It had all the flavours I love including cardamom, banana, and caramel!! Yes I made the unbeatable Banana, Butterscotch, and Cardamom Blondies!! The aroma of this cake as it baked in the oven was so wonderful that I could not wait to get a pot of water going to enjoy with it. But I resisted the temptation as I had a little time on my hands and decided to use this to glaze it.  To make it especially pretty I pulled out a box of sprinkles and decorated it with some pink and purple sprinkles on the top. Doesn't it look beautiful. Yumm!! This cake is superb with afternoon coffee - the flavours seem made for each other. We loved this cake and its going to be a keeper in my recipe box:)

Banana Cake with Chia Seeds and Oats (Eggless)


I have been baking cakes a long time now. Earlier I baked with eggs, then only with egg whites, but now I prefer eggless cakes and bakes. I just find the texture, flavour, and smell of the baked product improve if you skip the eggs altogether. The cakes are also less heavy and more easily digestible. What I love even more about this cake is that it is virtually grease free too! Yes - just one tablespoon of butter.


This is also one of the easiest cakes I have created. You can pretty much just throw all the ingredients in a bowl, one good whisk, and its good to in the oven. The final product is delicious and healthy. I loved the moist spongy texture that I got and the chia seeds added just the right amount of delicate crunch to this bake.

Ingredients:
1 cup All Purpose flour
1/2 cup oats flour
2 tbsp chia seeds
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup apple sauce
1/2 cup buttermilk
1 tbsp butter
1 large very ripe banana, mashed
1 tsp vanilla extract

Method:
  1. Sift together all the dry ingredients in a large mixing bowl.
  2. Add the apple sauce, buttermilk, vanilla extract, butter, and the mashed banana.
  3. Using a wooden spoon, mix well.
  4. Pour the mix into a prepared baking pan.
  5. Bake at 350 F for 35-45 minutes or until a toothpick inserted in the centre comes out clean.
  6. Cool the cake in the tin for 15 minutes and then on a wire rack.
Enjoy with a glass of cold milk!

Cinnamon Smile Buttermilk Pound Cake (Eggless)


When I started out with this project I intended to make a Cinnamon Swirl Cake! Pressed for time as I was I forgot to swirl the cinnamon streusel layer of the cake after pouring it into the pan. Oh well!! I thought: never mind, I am sure its it will make no difference to the cake. Even so, I was a bit upset knowing that the baked product would have no beautiful swirl to it.

This month's Challenge from the Daring Bakers was one of the best yet. Jason who writes at the Daily Candor was our host and he chose two traditional recipes from Armenia. We could do both or just one. Though I chose to do only one for the Challenge: the Armenian Nutmeg Cake, I know I would like to make the Nazook too some day!!

Very Orangey Orange Cake (Eggless)


I love citrus in cakes and bakes!! While I bake lemon pound cake and my olive oil lime cake every so often, I have not baked an orange cake in quite some time. Several years ago, I would bake an orange cake that required a syrupy drizzle icing, one that would soak into the sponge of the cake making the crumb juicy and moist. Mmmmm
