Banana Chocolate Chip Pancakes | Eggless Recipe

With the arrival of summer and the long break ahead, weekdays and weekends tend to merge together! With the holiday mood it is imperative to try something new but also keep things easy and light. A favorite for these long days is the Pancake. There is so much you can do with this simple batter - add fresh fruit, dried fruit, nuts, jams, syrups, chocolate, and much much more. Today's recipe is simple, delicious and filling. It's also so easy to make that you can have your kids join you in the kitchen! Once they can handle the hot pan and a spatula, they'll be making these pancakes for you every weekend!!


Ingredients:
1 cup all purpose flour
1 large ripe banana
1/4 cup chocolate chips
1 cup milk
2 tsp baking powder
1/4 tsp salt
1 tbsp oil
1 tbsp brown sugar
1/4 tsp cinnamon (Optional)
Butter/Oil for pan frying

Method:
  1. Mash the banana in a large mixing bowl.
  2. Add the sugar, salt, baling powder, cinnamon, and oil. Blend well.
  3. Pour in the milk, whisk the mix. The add the flour to make a smooth batter.
  4. Fold in the chocolate chips.
  5. Let the batter sit for 10 minutes.
  6. Heat a pan or griddle. Reduce the heat to medium and grease the p[an.
  7. Now pour a 1/4 cup batter to the pan. 
  8. Once you see bubbles popping all over the pancake, flip it over.
  9. Cook for a minute. Remove onto a plate.
  10. Repeat with remaining batter. Stack cooked pancakes on a plate.
  11. Enjoy with butter and maple syrup or honey.
Good to Know
  • If preferred, use half quantities of whole wheat and all purpose flour.
  • This pancake is also great with only whole wheat flour or a mix of whole wheat and buckwheat.
  • If using mixed flours, add more milk to get a dropping consistency.
  • Use the milk at room temperature.
