Gluten Free Chocolate Cake | Intense Deep Dark Chocolate Cake | Eggless Baking


I have been baking eggless for a really really long time!! I have been baking Gluten free for several years too!! However, I have not until now shared gluten free recipes regularly on my blog. Over the last two years I got so many requests from friends and family for the recipes of the gluten free cakes and bakes that I make that I have decided to start sharing my recipes on Annarasa | AEOF.
The first recipe I am sharing is a very chocolaty, chocolate cake. This is one of my favorite cakes - it is intensely flavorful with a dark chocolate flavor. It is also a very light cake, can be baked in advance, refrigerated for up to a week, frosted, enjoyed with ice cream or custard. This cake is great for freezing. I usually slice the cake and wrap each slice individually before placing in a freezer zip lock bag to freeze - easy to bring out portion size when peckish!!


Ingredients:
2 cups GF Flour
2 cups sugar
3/4 cup cocoa powder 
1 tbsp coffee powder
2 tsp vanilla extract
1/2 tsp salt
2 tsp baking powder
11/2 tsp baking soda
1 tsp cream of tartar
1 cup milk
1 cup yogurt
1/2 cup oil
1 cup boiling water

Method:
  1. Sift all the dry ingredients together in a large mixing bowl.
  2. Stir and mix them well.
  3. Now add all the wet ingredients except for the hot water into the dry ingredients.
  4. Stir and mix until they are well blended.
  5. Finally add the hot water very carefully into this mix.
  6. Stir slowly until the batter become smooth, creamy, and begins to look glossy.
  7. Pour into a prepared baking pan. 
  8. Bake at 350F for about 45-55 minutes.
  9. Do a toothpick test to ensure the cake is baked through.
  10. Remove from oven, let the cake sit in the pan for about 10 minutes.
  11. Then remove from the pan and cool completely on a wire tray before slicing.
  12. The cake is soft, with a beautiful crumb, slices clean, and is delicious to eat.
Good to Know
  • I used King Arthur's Measure for Measure, 1 to 1 Gluten Free Flour.
  • Use Dutch processed cocoa powder for a more intense chocolate taste.
  • The coffee really adds to the flavor of this cake. Reduce the amount or skip altogether if you like.
