Linguine with Carrots

So its interesting what you get to do with ingredients lying in your refrigerator and pantry in these times!! Here is a pasta recipe I conjured with Linguine, a couple of carrots, an onion, garlic, and pasta sauce. I added some of my favorite no salt seasoning from Costco and a slice of American cheese to the bowl and it was a meal!!


Ingredients:
1/3 pack Linguine
11/2 cups pasta sauce
1 large onion, chopped
2 carrots, cubed
6-8 cloves garlic, chopped
Kirkland No Salt seasoning (or seasoning of choice)
3 slices American cheese
1 tbsp cooking oil

Method:
  1. Boil the Linguine per packet instructions.
  2. Drain, wash in cold water, and set aside.
  3. Heat oil in a large pan, add the onion and garlic and sauté till onion is just translucent.
  4. Add the carrots, the pasta sauce, and the seasoning.
  5. Add a half cup water, cook for 5 minutes.
  6. Add the Linguine, and stir well to coat it with the pasta sauce.
  7. Turn off the heat, serve into bowls, and place a cheese slice on top.
  8. Eat and enjoy!

Good to Know
  • This recipe serves three. You can adjust servings as per your requirements.
  • For a vegan version, use vegan cheese slice.
  • For a gluten free version, use brown rice or quinoa noodles.
