Cinnamon Smile Buttermilk Pound Cake (Eggless)


When I started out with this project I intended to make a Cinnamon Swirl Cake! Pressed for time as I was I forgot to swirl the cinnamon streusel layer of the cake after pouring it into the pan. Oh well!! I thought: never mind, I am sure its it will make no difference to the cake. Even so, I was a bit upset knowing that the baked product would have no beautiful swirl to it.


I let the cake bake, cool, and then cut it for dessert. To my complete surprise and delight, I ended up with the cutest smile a bakery product could ever sport. The streusel layer had turned into a smile!! How crazy was that. Even the man in the house who usually breaks into a grin the second he smells a bake was delighted and amused to see a cake slice smiling back at him. Now if you want the same result, make sure you forget to swirl the streusel layer!!

Ingredients:
2 cups all purpose flour
1 packet vanilla pudding mix (1.5oz | 43g)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 stick butter
3/4 cup sugar
3/4 cup apple sauce
2 tsp vanilla extract
1 cup buttermilk


For the Cinnamon Streusel:
1/3 cup flour
1/4 cup brown sugar
1 tsp cinnamon
3 tbsp butter

Method:
  1. Sift together all the dry ingredients including the flour, vanilla pudding mix, baking soda, baking powder, salt, and sugar.
  2. In a separate bowl, blend the wet ingredients including the buttermilk, butter, apple sauce, and vanilla extract.
  3. Slowly add the dry ingredients to the wet ones. You will get a smooth and slightly loose batter.
  4. For the smile layer, mix the four, cinnamon, and brown sugar in a large mixing bowl. Using the palms of your hands, rub the butter into this mix.
  5. Pour just over half the batter into a prepared cake tin. Spread the smile layer evenly. Pour the rest of the batter over this.
  6. Bake in a preheated oven at 350 F for 30-40 minutes or until a skewer inserted into the centre comes out clean.
  7. Remove and cool in the tin for 10 minutes, the cool on a wire rack. Cut the cake only once it has cooled completely.
  8. Enjoy the smile!
By the way, this is one of the tastiest cakes I have ever made. I believe that the vanilla pudding mix added a lot of flavour to this cake while the texture was improved by the buttermilk.
