Strawberry Coffee Cake | Eggless Baking


Strawberries may seem like an odd choice in a baked product, but they actually taste really yummy enveloped in a sweet batter cake. They cook and become incredibly soft and jammy. You almost feel like you are eating a jam cake with all the best flavors surrounding it - vanilla, cinnamon, strawberry. The crunch of the cinnamon sugar adds a wonderful texture to the finished product. There are two ways (well, so many actually!!) to enjoy this cake. The first is warm with a good vanilla ice cream and a drizzle of strawberry syrup. The second is with warm fresh vanilla custard. Yumm!!

Ingredients:
1 cup all purpose flour
1 cup atta (Indian Chappati Flour)
1 tsp baking powder
1 tsp baking soda 
3/4 cup sugar
1/4 tsp salt 
1 cup yogurt
1/2 cup milk 
1/3 cup oil
1 tsp vanilla extract
1 cup fresh strawberries

For Cinnamon Sugar:
2 tbsp grain sugar
1 tbsp cinnamon powder

Method:
  1. Wash, wipe, and hull the strawberries. Slice or cut into bite-sized pieces.
  2. Sift the flours, baking soda, baking powder, and salt in a mixing bowl. 
  3. Add the sugar to this mix.
  4. In a separate mixing bowl, blend together the oil, milk, yogurt, and vanilla extract.
  5. Slowly add the dry mix into the wet mix to make a thick batter.
  6. Gently stir in the chopped strawberries. Do not beat the mix.
  7. Pour the batter into a prepared cake pan.
  8. Now mix the sugar and cinnamon powder together in a small bowl.
  9. Pour this mix evenly over the cake batter.
  10. Bake in a preheated oven at 350 F for about 40 minutes or until the cake passes the toothpick test.
  11. Remove from the oven and cool in the pan for at least half an hour.
  12. Remove and cool completely on a wire rack.

Good to Know
  • The batter for this cake may seem very thick. Do not add any further liquids to water it down.
  • The fresh fruit releases its juices as it cooks and will add enough moisture to the cake.
  • If you prefer, you can skip adding the vanilla extract in the batter.
  • This cake will need to be refrigerated. Remove as needed to bring to room temperature or warm in a microwave or a preheated oven.
