Fresh Apple, Pecan, and Cinnamon Cake

Its been some time since I baked a cake. So when I caught a break on Tuesday evening, I decided to pull out the flour, sugar, and eggs and have a go at it!! I baked a fresh fruit and nut cake with apples, pecans, and cinnamon. This cake is soft and spongy, but it also have a great crumbly texture. Its great with a hot cuppa but you can serve it as dessert with a dollop of fresh cream!

Ingredients:
1/2 cup pecans, chopped
1 1/2 apples, peeled, cored, chopped
1 cup all-purpose flour
11/2 cups whole wheat flour
1/2 cup wheat germ
3 egg whites
2/3 cup apple sauce, unsweetened
2/3 cup sugar
2tsp vanilla extract
1 tsp cinnamon
1/2 cup cooking oil (I used canola)
1/2 tsp salt
1 tsp baking soda

Method:
  1. Mix the chopped apples, vanilla extract, cinnamon, and chopped pecans in a bowl. Set aside.
  2. In a separate bowl, sift together the flours, salt, baking soda.
  3. Beat the egg whites and sugar in a mixing bowl until creamy. Add the add and the apple sauce and blend int until the mix is light and pale.
  4. Using a spatula, fold in the flours to get a thickish cake batter. Make sure there are no lumps and the ingredients are well blended.
  5. Gently fold in the apple-nut mix.
  6. Preheat the oven to 325F. Grease a loaf pan with oil. Pout in the cake mix. Pat to even out.
  7. Bake for around 11/2 hours or until the cake is golden brown and a toothpick inserted into the centre comes out clean.
  8. Cool in the pan for about 20 minutes. The remove and cool on a cake rack.
  9. Slice and serve.
This is one of my favourite cakes. I love the addition of fresh fruit to the cake batter. The apples, pecans, and cinnamon combine to give it a great pie like flavour. This cake stays well in the refrigerator for up to a week. Enjoy it with a cup of tea or coffee!

  10. It sounds delicious, Apu, but also like quite a bit of work - well, this comes from someone who bakes only v rarely so I guess it seems like a lot to me.
