Subz Korma | North Indian Style Mixed Vegetable Korma | No Chili Peppers

Subz Korma

There are times when I like to make subzi without any chili powder or green chilies. Just flavor with whole spices, garam masala, tomato, garlic, and cilantro, and you get the most wonderfully flavorful blend!! Today I am adding just such a recipe to my food blog - Subz Korma or North indian Style Vegetable Korma. This dish is not only delicious, but also nutritious and perfect for little ones.

Chow Chow Curry | North Indian Style Chayote Squash Curry


Chayote Squash or what is commonly known as Chow Chow is not a vegetable I was familiar with in my childhood. I don't remember seeing Chow Chow in a big vegetable markets in Delhi, though I am sure some smaller vegetable vendors might have carried it regularly to customers accustomed to using it. I remember eating a lot of Doodhi (Bottle Gourd) and Karela (Bitter Gourd) but Chow Chow was never on our platters. So it comes as a sort of irony that today I can buy Chow Chow in any supermarket or farmers market I visit, but I get to see the best quality Doodhi and Karela only in season at my local farm.

Parsi Style Aloo Curry | Potatoes in a Rich Creamy Gravy


Many years ago, my Mum purchased the Parsi food classic Jamva Chaloji by Katy Dalal. She absolutely loved the book and recommended it to me many times. I never really got the opportunity to buy it and when I wanted to, I found it unavailable. Last year however, I was lucky enough to find a copy of it at a Landmark store in Mumbai.

Peas Nutri-Nuggets Curry | Curried Peas and Soy Nuggets


I love cooking with soy nuggets, they are so versatile and wonderful! What I like most about them apart from the fact that they are nutritious is that they absorb the flavour of pretty much any curry they are cooked in. I always keep a stash ready in my pantry especially for days what I want to make a one pot meal or simply a quick curry.

Chana Masala | Spicy Chickpea Curry | Garbanzo Bean Curry


Kabuli Chana is a very popular and loved food in my family. Its made almost on every festival or celebration with Puri, Paratha, or Luchi. However we never really seem to stick to a particular recipe. As I was getting this post together, I realised I already have two recipes of Chole on my blog: Tari Wale Chole | Curried Chickpeas and Rice Plate Chole | Chickpeas with Rice. The first is a recipe that TH likes to make every so often, and the latter is a reminiscence of my days at DU!

Matar Aloo Tamatar ki Sabzi | Potato Peas and Tomato Stir Fry


Matar Aloo is a classic in the North Indian Kitchen. There are so many ways in which it is prepared in Delhi, Punjab, Haryana, and UP. The recipe I have today is a classic Matar Aloo from UP. The vegetable is a staple of the diet there. It is made with tomatoes for a delicious tanginess, and the ginger, garlic, and green chilies, all add to the flavour. This Sabji | Sabzi is best enjoyed with hot rotis or parathas, freshly chopped salad, and some plain yogurt on the side.

Hara Masala Makai Pulao | Spicy Green Corn Rice


Last night I made this simple Corn Pulao with Gajar Koshambir (Carrot Salad) for dinner. We were just back from a long weekend and craving some good home cooked food. I already had some Arhar | Toor Dal | Pigeon Pea ready in the freezer. So while it defrosted, I decided to rustle up something special as well as quick.This Corn Pulao is a little different, as I decided to add cilantro to the cooking process. This gave it a really fresh and tangy taste which was balanced beautifully by the sweetness of the corn.

Masala Tamatar Bhaat | Spicy Tomato Rice

Whenever I want to make tomato rice, I hunt around for the tangy yet sweet pink tomato!! Piled high at green grocers in the big vegetable markets of New Delhi, these tomatoes were firm yet wonderfully juicy. No winter salad would be complete without them. Tomato purees and tomato paste was not widely available in those days and my Mum and Grandma made do with the fresh version for all those wonderful winter recipes.
