Banana Walnut Cake Bars | Eggless Baking


The other day I was reading an article about how Banana Bread is having a moment!! Well, why not - there really is nothing like a bread, bake, or cake made with ripe, sweet bananas!! This is a recipe for Cake Bars and the traditional much loved combination for Banana Cake Bars tends to be chocolate chips. Since we are clean out of those and we are working with what is in the pantry, I decide to go with an ingredient that is much underestimated but truly delicious - walnuts. Walnuts really do very well in baked goods - they give bite, texture, and a flavor to them. If you have never tried baking with walnuts, this a recipe you might want to try!!

Ingredients:
2 large very ripe bananas
2/3 cup sugar
1/4 cup oil (I use olive oil)
1/2 cup yogurt + 1/4 cup water
13/4 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1 cup walnuts, chopped

Method:
  1. Mash the bananas to a soft pulp in a large mixing bowl.
  2. Add the sugar and mix in well.
  3. Now pour in the oil, the yogurt-water mix, and blend these all together using a whisk.
  4. In a separate bowl, sift all the dry ingredients, except the walnuts, together.
  5. Mix the dry ingredients into the wet ingredients.
  6. Finally gently fold in the chopped walnuts.
  7. Pour this batter into a well greased cookie tray.
  8. Bake in a pre-heated oven at 350F for 18-22 minutes, or until a toothpick inserted in the center comes out dry.
  9. Remove from the oven, let cool for 10 minutes. Then cut into bars of desired choice.
  10. These bars can be saved in the refrigerator for up to a week. They will stay crumby, moist, and delicious!!
Good to Know
  • If yogurt is runny, do not add the water. Use 3/4 cup yogurt.
  • If you have smaller bananas, use 3 well-ripened ones for this recipe.
  • For the cake bars, a cookie tray works best. However the same batter will give you a great cake too, so you can use a cake tin or loaf tin for this bake too.
Vegan Substitute: use vegan yogurt in place of dairy yogurt.
Gluten Free Substitute: a good gluten free flour will yield excellent results with this recipe.
