Spicy Panner-Filled Rolls

Paneer or Indian-Style Cottage Cheese makes a delicious filling for these quick and easy bread rolls. Paneer is usually made with buffalo milk and is rich in calcium and contains upto 500mg calcium in a serving of a single cup. Quite simply, its good for you. These rolls taste delicious warm or cold. They are perfect as a snack, great for a party, but throw in a salad or soup and you get a yummy meal that's nutritious at the same time.


For the Dough:
11/2 cups all purpose flour
1/2 cup wheat bran
1/2 tsp red chilli powder
1 tbsp olive oil
1/4 cup water
1/4 cup milk
11/2 tsp dried yeast
Salt, to taste
1/2 tsp sugar

For the Filling:
1 cup paneer, cubed very small
2 large tomatoes, chopped fine
1 medium onion, chopped fine
2 green chillies, minced
1/4 tsp turmeric
1/2 tsp red chilli powder
1/4 tsp onion seeds
1 tsp olive oil
Salt, to taste


Method:

  1. First prepare the dough. Warm the water and milk, mix in the sugar, and then sprinkle the yeast. Cover and set aside for 5-7 minutes. The yeast should be frothy. If not, repeat this process. This is the tricky part for bread, and its simply a matter of getting an idea of how warm the liquids need to be when you add the yeast to it. Just a little patience and practise!!
  2. Sift the flour, add the salt and chilli powder. Next add the liquids with yeast, and bring together to form a soft dough. Add the oil and knead the dough lightly for 3 minutes. If the dough is too soft to knead at this stage add a couple of tablespoons of flour.
  3. Place the dough in a bowl, cover, and set aside to proof for 45 minutes.
  4. Meanwhile, prepare the filling. Pour the oil into a non-stick pan. When warm, add the onion seeds. Next add the onion and fry until transparent. Now add the chillies, tomatoes, turmeric, red chilli powder, and fry for 5 minutes.
  5. Add the cubed paneer. Cover and cook for 2 minutes. Uncover and fry it on high heat for another 2 minutes.
  6. Remove into a bowl and allow to cool completely.
  7. To assemble the rolls, divide the dough into 10 equal portions. Gently roll each portion into a small circle much like a thick tortilla. Spoon the filling onto the centre, fold over to form a roll. Repeat for all portions.
  8. Place the filled rolls on a baking sheet. Bake at 350F for 20 minutes or until the rolls are baked through and golden brown on the top.
  9. Remove from the oven. Cool for 5 minutes - serve warm.
