Do Kaddu Erisseri | Two Pumpkin Erisseri

If you eat pumpkin, you will love this recipe!! On the other hand, I am tempted to say if you always ignored the this humble vegetable, this recipe may win your taste buds and possibly your heart. The spiciness of the curry paste and the sweetness of the pumpkin give this dish a delicious flavour. You can make this with any kind of pumpkin, but I like to prepare it with a combination of the acorn squash and butternut squash. The combination of these two different types of pumpkin helps balance the flavours in this dish beautifully.



Ingredients:
2 cups acorn squash, peeled and cubed
2 cups butternut squash
1/2 cup fresh coconut
8-10 curry leaves
11/2 tsp urad dal (split black gram lentils)
Salt to taste
1/2 tsp coconut oil
1 tsp canola oil
1/2 tsp turmeric powder
2 dried red chilies
1/2 tsp black pepper, freshly ground
1 tsp cumin seeds
1 tsp mustard seeds

Method:
  1. Place the pumpkin cubes in a large saucepan.
  2. Add salt, water, and turmeric powder. 
  3. Boil until the pumpkin cubes are just soft.
  4. While the pumpkin is cooking, prepare the spices.
  5. Grind together the coconut, cumin, and red chilies.
  6. To this mix, add the ground fresh pepper, blend together till you get a paste.
  7. Once the pumpkin is ready, add this paste to the saucepan.
  8. Continue simmering on a medium heat foe 10 minutes or until the water is absorbed by the vegetable, and a thickish sauce coats the pumpkin cubes.
  9. Prepare the tarka or tempering by heating the canola and coconut oils in a small pan.
  10. Add the mustard seeds. When they begin to pop, add the curry leaves, and then the urad dal. 
  11. Turn off the heat. Pour this over the cooked vegetables.
  12. Serve immediately with chappatis and raita/dahi.

  2. I think that pumpkin must be great done this way. So far I only made as a 'curry' with Thai spices. I should try yours, but it is so difficult to find curry leaves here!!!
