Shimla Mirch-Aloo Bhaji (Green Bell Pepper | Capsicum Potato Stir-Fry)

Sweet Green Bell Peppers are commonly referred to as Capsicum in India. In the Northern part of the country, they are also called Shimla Mirch. It usually comes into the market in the winters, and has an incredibly distinct crunchiness and sweet taste! Paired with potatoes, it makes for a wonderful stir-fry.



Ingredients:
1 large Green Bell Pepper, chopped
2 medium potatoes, cubed
1/2 tsp cumin
1/2 tsp turmeric
Salt to taste
2 green chilies
1 tbsp oil

Method:
  1. Heat oil in a pan. Add the cumin.
  2. When it begins to roast, add the turmeric and green chilies.
  3. Add the potatoes. Give them a stir. Cook for a couple of minutes.
  4. Now throw in the bell peppers. 
  5. Give the vegetables a good stir so that they are well coated with oil and spices.
  6. Cover and cook till the potatoes are soft.
  7. Season with salt.  
Serve the stir-fry vegetable hot with chappatis or parathas (Indian Flatbreads), yogurt, and pickles.
