Nimki | Namakparas | Crisp Savoury Diamonds

Nimki is a popular savoury treat make during Diwali in North India. Deep-fried and crunchy, they are simply delicious. Though I am not very fond of deep frying, I do get down to serious some serious frying once a year, usually during the festive season. And I always try to make at least one batch of Nimki for us to munch on over the month!!
Ingredients:
3 cups of maida (all purpose flour)
2 tsp cumin seeds
1 tsp red chili powder
3 tsp ghee
salt to taste
warm water to knead the dough
oil for deep frying


Method:
  1. Sift together the maida, salt, red chili powder, and cumin seeds.
  2. Using your hands, mix in the ghee.
  3. Next make a soft dough using the warm water.
  4. Place in a greased bowl and set aside for a couple of hours.
  5. Divide the dough into small balls the size of a Persian lime. Take one but keep all others covered until ready to use.
  6. Roll out the first ball into a thin pastry sheet. Cut into diamond shapes using a sharp knife.
  7. Heat the oil in a kadai or a fryer. 
  8. Gently drop in the cut pastry and fry on a medium heat till golden brown.
  9. Drain onto a kitchen towel.  Cool completely, then store in an air tight container.
  10. Repeat for all the dough till you have a nice pile of crispy savoury diamonds.
The Nimki will stay crisp and crunchy in an air-tight container for several weeks. Enjoy with a cup of hot steaming tea. Nimki is a savoury that is made in many homes during Diwali. But this wonderful snack is also perfect for traveling. Pack in individual servings in small ziplock bags and keep ready for a quick snack.

  3. These look great and yummy! We have something similar in Italy (without the spices, of course). I also prefer not to fry too much, but for festivities is so nice!!!
