I chose top make peanut butter and my savoury recipe is Satay Dipping Sauce. The sauce can be use for dipping grilled tofu, vegetables of your choice, and it tastes particularly delicious with steamed dumplings.
Ingredients:
3/4 cup coconut milk
4 tbsp peanut butter
1 tbsp lemon juice
1 tsp soy sauce
1 tsp brown sugar
1/2 tsp ground cumin
1/2 tsp ground coriander
1-2 dried red chilies, chopped
Method:
- Mix dry ingredients in a bowl. Add soy sauce and lemon juice. Mix well.
- Over low heat combine peanut butter, coconut milk, and the soy-lemon mix.
- Once peanut butter has melted, remove from heat.
- Cool and serve with your choice of vegetables, grilled tofu, or dumplings.
