Hare Pyaaz aur Pudina ke Parathe | Spring Onion and Mint Flatbread

Its been a hectic few weeks out here. Writing load has been heavy though enjoyable and I've had little time for cooking. In the last two weeks, summer appears to have arrived in full force, though we are seeing a great number of summer storms too. The sunshine and rain has worked wonders for the plants which are blooming!! I will get some photos of my garden up in the next few posts.

Today's recipe is of a paratha or Indian style flat bread that is very quick and easy to prepare. I usually prepare a big batch of parathas every month and freeze them - that way I can pick out the ones I want at meal times and warm them quickly in the microwave before serving. Preparing Indian style breads in advance is a great boon. It saves me from the everyday heat of the kitchen and there's always a well stocked fridge if friends drop in!!

Ingredients:
2 cups atta (Chappati flour) + extra for rolling
1/2 tsp salt
1/2 tsp cumin
2 tbsp plain yogurt
2 tbsp mint, chopped fine
2 green chilies, minced
4-5 spring with their greens, chopped fine
Water as needed
Ghee (Clarified Butter), as needed

Method:
  1. Sift the atta and salt in a bowl. Add the cumin, mint, green chilies, and spring onions. Mix together.
  2. Now add the yogurt and blend into the flour mix.
  3. Using water sparingly, make a tight dough. It should not be to soft or sticky.
  4. Cover and set aside for an hour.
  5. Set the griddle on the high heat and let it warm up. Reduce the heat to medium.
  6. Divide the dough into golf size balls. Roll each out into a thin disc.
  7. Place one disc onto the griddle and let it cook for a minute or so or until you see brown spots appear. Turn over and cook the other side.
  8. Using a teaspoon apply a thin film of ghee on the disc.
  9. Remove from the heat and place on wax paper. 
  10. Repeat for all the rolled out parathas. Pile the parathas on top of each other as they are cooked.
  11. Serve hot with dal (lentils), dahi (yogurt), or bhaji (vegetables) of choice.

Vegan Substitute: Replace ghee in this recipe with vegetable oil.
