Strawberry Preserve for the Daring Cooks September 2010

Ah! Food Preservation, what a perfect theme for late summer! Living in the northern hemisphere, there is the urge to squirrel away the bright flavours of summer for the icy cold winter, when sun-ripened vegetables and fruit rarely grace our tables.
As an annual ritual, I make my batch of jams, preserves, chutneys, and pickles and stash them away in the pantry. The pleasure we get from each of these over the dark winter months keeps the summer fresh in our memory.

This year, apart from freezing raspberries and strawberries, I made my Summer Raspberry Jam, Peach Chutney, and a Whole Strawberry Preserve. The Whole Strawberry is my contribution to this month's Daring Cook's Challenge!

Postscript: The September 2010 Daring Cooks’ challenge was hosted by John of Eat4Fun. John chose to challenge The Daring Cooks to learn about food preservation, mainly in the form of canning and freezing. He challenged everyone to make a recipe and preserve it.
