Festive Seven Layer Dip with Home Made Refried Beans

Super Bowl Sunday had always been celebrated with a ritualistic fervour by my friends from across the pond when I lived in England. Somehow I never quite understood the enthusiasm. Most probably because I had not been exposed to the game, did not know the teams, or anything else about this annual event for that matter. I guess it was also because the time difference meant that the game one had to be awake past mid-night to enjoy the festivities - something my schedules would never permit.

Well, now I live in the States and Super Bowl is a part of life!! This year I was really keen on making a Seven Layer Dip at home. So I did just that, starting with the refried beans {to follow}, fresh tortillas, and to add that Indian touch masala soda!!

Ingredients:
1 1/2 cups refried beans
1/2 cup fat free sour cream
1/2 tsp taco seasoning
1/2 cup cheddar cheese, grated
1 cup guacamole
1/2 cup tomatoes, chopped
1/2 cup black olives, sliced
1/2 cup spring onions, sliced

Method:
  1. Spread the refried beans in a shallow serving dish.
  2. Mix the sour cream with taco seasoning. Layer on top of the refried beans.
  3. Layer with guacamole, cheddar cheese, tomatoes, spring onions, and olives.
Serve with chips of choice, fresh tortillas, or pita chips. This party platter goes to Valentine & Super Bowl Recipe Carnival hosted by Manasi @ Fun & Food Cafe.
