Daring Cooks July 2010: Home Made Peanut Butter and Satay Dipping Sauce

The Daring Cooks challenge for July is Nut Butters!! We could choose from any type of nut including peanuts, walnuts, cashews, pecans, almonds, hazelnuts, or macadamias. The instructions were simple - puree the nuts into a paste or butter. Then use the fresh homemade nut butter in a savoury recipe.

I chose top make peanut butter and my savoury recipe is Satay Dipping Sauce. The sauce can be use for dipping grilled tofu, vegetables of your choice, and it tastes particularly delicious with steamed dumplings.

Ingredients:
3/4 cup coconut milk
4 tbsp peanut butter
1 tbsp lemon juice
1 tsp soy sauce
1 tsp brown sugar
1/2 tsp ground cumin
1/2 tsp ground coriander
1-2 dried red chilies, chopped

Method:
  1. Mix dry ingredients in a bowl. Add soy sauce and lemon juice. Mix well.
  2. Over low heat combine peanut butter, coconut milk, and the soy-lemon mix.
  3. Once peanut butter has melted, remove from heat. 
  4. Cool and serve with your choice of vegetables, grilled tofu, or dumplings.

Post Script: The July 2010 Daring Cooks’ Challenge was hosted by Margie of More Please and Natashya of Living in the Kitchen with Puppies. They chose to challenge Daring Cooks to make their own nut butter from scratch, and use the nut butter in a recipe.
